“Travel and Tasty Food Go Hand in Hand for Us”

If any of you know us, you know we have been traveling the world for the past 5 years. Foot loose and mostly fancy free. From Spain, Morocco, Israel, France, Andorra and India. From Thailand, Laos, Malaysia, New Zealand, Australia, Colombia and Ecuador. From Granada, the Bahamas, Indonesia, Portugal and Mexico. And that’s just what I remember.

Cordova, Alaska harbor. The Copper River is nearby. Where the highest quality salmon swim.

Around the world we go. And what we cannot ignore is the great food along the way. The amazing Tapas in San Sebastian, Spain and the Seafood Paella cooking lessons from Carlos and Jo in Horta de San Juan, Spain. The exotic flavors of India that make it a place not to be missed. The Mole, Cacao Cafe’s and the Chiles Rellenos de Sardinas of Oaxaca, Mexico. The famous Falafels of Israel and the New Zealand Lamb and Venison Pot Pies, sold along highway food stands. The breakfast Noodle Bowls of Laos and the fascinating Fruits of Ecuador. The cooking class in Chiang Mai, Thailand where we learned to make 17 food items including fried grasshoppers, followed by Thai Massages. Oh and avocados that are practically the size of my head and oh so buttery.

So it’s obvious that travel and tasty food go hand in hand for us. And frankly, when we’re on the road, if we are not mesmerized by the food, we are soon to be out of there. So it was an easy leap to begin a build out of a mobile food truck, as our next great adventure to explore.

We have cooked together for a few decades now. It’s fun, entertaining and slightly competitive to see which one of us has the most inspiration and vision to create something tasty and new. But what to offer in our mobile kitchen? This was the easy part. Since we can both boast years of commercial fishing in the far north of Alaska, wild caught salmon and other wild (always!!!) seafood was the obvious choice. Between the two of us, we have decades of time commercial fishing in Alaska and other international ports, as well as cooking for crews on fishing boats, set net sights and restaurants.

Thanks for all your encouragement and support as we embark on our next great adventure; providing the BEST wild seafood out there in any food truck or mobile unit.

I hope you love our Sockeye Salmon and Pacific Shrimp Tacos as well as our Pacific Mahi-Mahi tacos, as much as we love to create them, along with the other tasty bites we have. And don’t forget the fresh aioli’s and homemade pickled onions.

Best fishes,

Dale and Monica Caulfield
